01 - Preheat oven to 400°F. Line a baking sheet with parchment paper.
02 - In a medium mixing bowl, combine shredded cheddar and Parmesan cheeses. Add garlic powder, paprika, and black pepper if using. Stir until thoroughly blended.
03 - Drop heaping tablespoons of the cheese mixture onto the prepared baking sheet, spacing each about 2 inches apart. Gently flatten each mound with the back of a spoon.
04 - Bake for 6 to 8 minutes, or until the cheese crisps are golden brown and bubbling.
05 - Remove baking sheet from oven and let crisps cool for 5 minutes to set.
06 - Carefully transfer crisps to a wire rack and allow to cool completely.
