10 - 4 cups vegetable broth (gluten-free if required)
11 - 1 teaspoon dried thyme
12 - 1 teaspoon dried parsley
13 - 1 bay leaf
14 - Salt, to taste
15 - Black pepper, to taste

→ To Finish

16 - 1/2 cup heavy cream or coconut milk
17 - 2 tablespoons fresh parsley, chopped (optional for garnish)

# How to Make It:

01 - In a large pot, heat olive oil over medium heat. Add diced onion and minced garlic; sauté for 2 to 3 minutes until aromatic.
02 - Add sliced carrots, celery, and diced potato to the pot. Stir and cook for 5 minutes, allowing vegetables to soften slightly.
03 - Add diced zucchini, green beans, and peas. Stir and cook for an additional 2 minutes.
04 - Pour in the vegetable broth. Add dried thyme, dried parsley, bay leaf, salt, and black pepper. Bring the mixture to a boil over medium-high heat.
05 - Reduce the heat to low and simmer uncovered for 20 to 25 minutes, or until all vegetables are tender.
06 - Remove the bay leaf. Use an immersion blender to puree the soup until smooth, or blend in batches for a chunkier consistency if preferred.
07 - Return heat to low. Stir in heavy cream or coconut milk, and gently heat the soup for 2 to 3 minutes. Adjust seasoning with additional salt and pepper as desired.
08 - Ladle soup into bowls. Garnish with chopped fresh parsley if desired, and serve while hot.
