→ Base/Coating

08 - 1/2 cup (50 g) almond flour
09 - 1/4 cup (20 g) unsweetened shredded coconut (optional, for rolling)

# How to Make It:

01 - Beat the cream cheese and Greek yogurt together in a medium mixing bowl until smooth and creamy.
02 - Add the protein powder, honey or maple syrup, vanilla extract, and lemon zest. Mix until well combined.
03 - Gently fold in the blueberries, being careful not to crush them.

05 - Using a small cookie scoop or spoon, portion out the mixture and roll into 1-inch balls.
06 - If desired, roll each bite in shredded coconut for extra texture.
07 - Arrange the bites on a parchment-lined tray and refrigerate for at least 1 hour, until firm.
08 - Store in an airtight container in the refrigerator for up to 5 days.

  • You can prep them in under fifteen minutes and actually have snacks for the whole week
02 -
  • If the mixture feels impossibly sticky walk away and let it chill longer because trying to work with it warm will just frustrate you
  • These taste significantly better after a full night in the fridge when the flavors have had time to really mingle
03 -
  • Dampen your hands slightly before rolling to prevent the mixture from sticking to your palms
  • If your protein powder is unflavored increase the honey to three tablespoons or they will taste oddly bland
