01 - Set oven temperature to 400°F and allow to fully preheat.
02 - In a large baking dish, whisk together olive oil, lemon juice, minced garlic, vegetable broth, dried oregano, salt, and black pepper until fully combined.
03 - Add potato wedges to the marinade and toss until evenly coated. Arrange potatoes in a single layer in the baking dish.
04 - Roast potatoes uncovered at 400°F for 40 minutes. Baste the potatoes with pan juices halfway through.
05 - Raise oven temperature to 425°F. Gently turn potatoes and continue roasting for 30 to 35 minutes, until crisp and golden at the edges and most of the liquid is absorbed.
06 - Sprinkle potatoes with chopped fresh parsley and serve immediately. Add lemon wedges as a garnish if desired.
